I had to make something really quick to take to my son’s basketball banquet last night. It’s his last one, his senior year is almost at a close, so I wanted them to be special and he loves Devil’s Food cakes. So, I came up with these, after some “pinspiration” from Pinterest!
1 Devils Food cake mix
1/3 cup of veggie oil
1 cup of water
1/2 cup of dark chocolate chips
1 tsp. vanilla
2 containers of classic chocolate icing
1/4 cup chocolate chips for drizzle
2 tbsp. butter
Put dry cake mix in a large bowl and stir in chocolate chips till coated with the dry mixture. This helps to keep them from sinking to the bottom of the cupcake. Then mix in the wet ingredients: eggs, oil, vanilla and mix thoroughly with a mixer.
Pour into cupcake liners and bake till a toothpick comes out clean; about 20 minutes. Allow to cool completely; even better, cool them in fridge.
Once cool, swirl on the icing using a large star tip and icing bag. Use a decent icing bag so it doesn’t explode on you like it did me last night! In a small bowl, add 1/4 cup chocolate chips and butter and melt in the microwave for 30 seconds. Stir and melt for another 30 seconds or until melted. With a spoon or fork, get a small amount of the chocolate and shake from side to side over the cupcakes and drizzle with the dark chocolate. Top with marshmallows. I drizzled a little more chocolate over the marshmallows to make them extra pretty!
I got rave reviews last night. I wound up only do half with marshmallows and half without, just in case someone didn’t want them. They were amazing and so simple and stress free!
