Buffalo Chicken SubsLooking for a new twist on the classic meatball sub?  Well, this is it!  Becca and Spencer loved it!  Ok, so did  and I don’t typically like hot food. It’s just hot enough that it’s kid friendly, but you could certainly make it hotter by adding more hot sauce or using super hot sauce. Need to cool things down a bit? Add a drizzle of Ranch dressing or Blue Cheese to cool things off!  This recipe feed was enough for lunch for 2-3 people.  Double if making for 4 or more!


1 pound of ground chicken
1/2 tsp. onion powder
1/4 tsp. garlic powder
1/2 tsp. parsley
1/2 tsp. salt
1/4 tsp. pepper
3 dashes of Texas Pete hot sauce
4 Tbsp. Italian bread crumbs
2 Tbsp. butter
1/2 cup of Texas Pete hot sauce
Provolone Cheese or favorite cheese
Soft Hoagie rolls
Ranch or Blue cheese dressing
1 – 2 Tbsp. Olive oil



In a skillet drizzle olive oil and heat to medium.  In a bowl, mix ground chicken, bread crumbs, salt, pepper, onion, garlic, parsley and hot sauce.  Shape into meatballs.   Add meatballs to skillet and brown.  When meatballs are brown, turn heat to medium low to cook through.  Remove meatballs from heat and melt butter.  Add 1/2 cup of hot sauce to melted butter and stir with a whisk to combine.  Stir meatballs back into the skillet and coat with sauce.

Now build your sub!  Meatballs with a little sauce (or a lot) and provolone cheese. Melt cheese for 30 seconds in microwave.  Top with ranch dressing or blue cheese dressing.  Enjoy!Blog Signature
